Ingredients
- 2 hard-boiled eggs (whole, or egg whites only)
- ¼ cup (25 g) unsweetened cocoa powder
- 3 tablespoons erythritol-stevia blend or maltitol (or omit the sweetener for a no-added-sugar version)
- ⅓ cup (80 ml) unsweetened almond milk
- 1 tablespoon peanut butter (about 10 g)





Instructions
Cook the eggs in a microwave egg cooker for 10 minutes at 550 watts. Once cooked, let them cool completely before peeling.
Place the hard-boiled eggs, unsweetened cocoa powder, erythritol or maltitol, unsweetened almond milk, and peanut butter in a blender or use an immersion blender.
Blend for about 2 minutes, or until the mixture is completely smooth and creamy.
Enjoy immediately as a rich chocolate mousse, or refrigerate for 30 minutes if you prefer a thicker, firmer consistency.
Serving Suggestions
Serve the chocolate cream in individual bowls as a healthy dessert. It also makes a delicious spread on toast or a tasty topping for pancakes, making it an excellent high-protein breakfast.
